Among the closest shapes (at most one axis off by one step), ordered by score. Re-reviews of the same sake are excluded and each brewery appears once. Where fewer than four qualify, the next closest shapes fill the gap.
From Senkin's Modern series, which went entirely kimoto last year, we introduce Sanshiki. Sanshiki is a sparkling genshu (undiluted) made by secondary fermentation in the bottle. Fine-grained origarami (fine lees), acidity and the cut of the alcohol give it a very short finish for a cloudy sake, clean and refreshing. Marked by ripe banana, concentrated apple and a smooth creaminess. The fierce sparkle sets your appetite alight. A bottle perfect as an aperitif.
