"Ubusuna" is the new brand from Hananoka Shuzo, dedicated to pursuing natural farming methods. Alongside using rice from the Kikuchi River basin and kimoto brewing, it has achieved kioke shikomi (wooden vat brewing), no pesticides and no fertiliser. Its flavour is remarkably clean, characterised by umami and a milky quality that come from the kimoto method. A fruity aroma of muscat and pineapple. Following the effervescence typical of Ubusuna comes fresh sweetness and acidity, then umami and a faint flavour from the wooden vat.
