Among the closest shapes (at most one axis off by one step), ordered by score. Re-reviews of the same sake are excluded and each brewery appears once. Where fewer than four qualify, the next closest shapes fill the gap.
"NEXT5" is a unit formed by five Akita sake breweries joining forces. After a collaboration with Ispahan, they're releasing sake again for the first time in two years, selling one bottle a month for five months straight starting in August. This time it's a bottle from Kuribayashi Shuzoten, the brewer of Harukasumi. Kuribayashi normally favours Misatonishiki rice, but this year's NEXT5 is bound by a "Kairyo Shinko" rule — so what kind of sake will they brew? The aroma is a gentle fruitiness, but the flavour is built on a rich, concentrated umami base, with a faint sweetness adding a flourish like a flower.
