Among the closest shapes (at most one axis off by one step), ordered by score. Re-reviews of the same sake are excluded and each brewery appears once. Where fewer than four qualify, the next closest shapes fill the gap.
"Mizuhana" is the new brand from Nara's Yucho Shuzo, founded in 1719 with a long history. It aims to recreate techniques passed down from ancient Nara in the present day, brewed via ogame shikomi (fermented in large earthenware jars) at a brewery built solely for Mizuhana. This release recreates the dan shikomi (staged winter mashing) method recorded in the Tamon-in Diary of Kofuku-ji Temple. A rich, full-bodied flavour with a toasty aroma like buttered toast melting. Best enjoyed on the rocks. The Mino-yaki (Mino ware) pottery bottle is beautiful too.
